This dish goes great with a roast pork or grilled meats, chicken or fish.
Yield:
4 Servings Ingredients:
1/2 box ( 8 oz / 227 g ) Rice Noodles , any width
4 cups vegetables of your choice, sliced thinly
2 Tbsp oil
1 can Coconut Milk
1 packet Peanut Sauce Mix
*NOTE: Garnish with fresh chopped cilantro, bean sprouts or chopped peanuts.
Cooking Instructions
1. Prepare Rice Noodles according to package for sauté.
2. In a large non-stick skillet or wok, heat oil over medium high heat.
3. Add vegetables and stir-fry until vegetables are tender crisp. Drain in a colander.
4. Add Coconut Milk and Peanut Sauce Mix to the skillet. Mix together well. Bring to a boil and simmer for 2 minutes.
5. Add the drained Rice Noodles, stirring constantly. Stir-fry until noodles are still firm yet tender.
6. Add the vegetables and toss until well mixed and heated through.
7. Pour into your favourite serving platter and serve.
