Bacon and or Gammon Steaks
Ingredients
10 litres Water
5 Kg Pork
500 gr Salt
50 gr Sugar
50 gr Erthorbate
50 gr Sodium Nitrite
Note:
Allow 2 litres of water per kilo of meat
Use:
Belly for bacon, Belly tail for streaky and thigh for gammon
Cooking Instructions
Makes 5 Kilos of Bacon or Gammons
1) Wash clean meat,
2) Cool meat (Pork) in freezer for 2 hours
3) make mixture above.
4) Place Pork in to plastic container, add mixture, make sure meat is under the water, add a plate and weigh down if necessary.
5) put in fridge
6) After three days, turn meat
7) After seven days take out, clean under running water, let drip and place in freezer for four - five hours until semi frozen and then slice.
