Coconut Tapioca Pudding
Ingredients
Yield:
Makes 3 & 1/2 cups
Ingredients
1 can Coconut Milk
1 cup milk
1/2 cup sugar
1/2 cup sweetened flaked coconut
1/4 cup quick cooking tapioca
1 egg, beaten
1/2 tsp pure vanilla extract
1/2 tsp coconut extract
*Serving Idea: Serve warm sprinkled with raisins and slivered almonds.
*Note: For a non-dairy dessert, substitute 1 cup milk with one 8 oz. can crushed pineapple in its own juice and omit vanilla
extract.
Cooking Instructions
1 In a heavy bottomed saucepan, combine Coconut Milk, milk, sugar, flaked coconut, tapioca and egg. Beat well and let sit for 5 minutes.
2 Stirring constantly, cook the tapioca over medium heat bringing to a full boil. Remove from heat.
3 Stir in vanilla extract and coconut extract.
4 Cover and cool for 20 minutes.
5 Serve warm with fruit of choice or refrigerate and serve cold.
