It's hard to imagine something so tasty is so easy to prepare.

Ingredients
1 Tbsp olive oil
1 & 1/4 lb salmon fillet (skin on one side)
1 medium onion, sliced thinly
1 packet Pad Thai Sauce
1 large lime (1Tbsp fresh lime juice & 4 lime wedges)
(Optional) Chopped cilantro
Cooking Instructions
1 In large skillet heat oil over a medium high heat. Salt & pepper fillet. Lay fillet skin side down. Pan-fry for 5 minutes or until skin is very browned and crisp.
2 Gently turn over, pan-sear flesh side until lightly browned and just cooked through, (will flake with fork but is still moist). Transfer fish to plate and cover.
3 Add onions to oil in skillet and sauté until soft. Add Pad Thai Sauce and lime juice. Cook until heated through. Pour sauce over fish and serve with lime wedges. Sprinkle with cilantro if desired. This dish is especially good served with cooked jasmine rice.
